Asian style chicken with pink mushroom sauce

While waiting for Valentine why don't we taste something pink... :)

Asian style chicken skewers with pink mushroom sauce

For the chicken:

1 big chicken breast
2 tbsp of soya sauce
2 tbsp of olive oil
1 tbsp of grated ginger
1 tbsp of dried rosemary ( fresh would be even better)
1 lemon ( zest and juice)
salt and pepper
1 chilly pepper ( optional)
0.5 tea spoon of nutmeg

Mix all the ingredients and pour over chicken cut into stripes. Leave for about 30 min and put on the skewers ( optional) and grill for 6 min on each side. Serve with a sauce.

For the sauce:

150 gr of mushrooms cut into halves
1 medium sized onion
0.5 glass of tomato juice
1 glass of milk ( you can use cream, but I wanted something lighter)
salt and pepper
1 tbsp of rice or corn starch

Fry the onion until it’s caramelized. Add the mushrooms. Season with salt and pepper. When the mushroom is done add tomato juice. Mix starch and milk, pour into the sauce. Mix it. Let it thicken. You can add some fresh herbs or chilly pepper for extra kick! 

I served  my chicken skewers with the sauce and potato puree with fresh dill and fresh vegetable salad.
