As I wrote once, I really love cabbage of any kind and Brussels sprouts are just a mini version of cabbage with a lovely taste!!! This dish is a great side dish if you just don't overcook it. I know many people who avoid eating this vegetable because of it's smell or taste. Overcooking sprouts releases the sulphur smelling glucosinolate - sinigrin. Generally 6-7 minutes boiled or steamed is enough to cook, without overcooking and releasing the sinigrin. So watch the time and enjoy a great veggie!!!
What we need:
Brussels sprouts - about half a kilo
water to boil sprouts
a pinch of fennel seeds
50gr of almond flakes
olive oil to fry onion and almonds
What we have to do:
1. Wash and drain Brussels sprouts, remove bad leaves. Put into a salted boiling water and boil for 6 min and drain again.
2. Chop onion and fry into a pan. Add almond and fry for 2 min. Add salt and pepper and fennel seeds.
3. Mix Brussel sprouts with onion and almonds. Serve!!!
