Chicken with roasted balsamic veggies

Here's what's for dinner tonight!!! Easy and takes almost no effort and a very little time!!! 

What we need:

2 chicken breasts ( for marinate: 1 tbsp of mustard and honey, 1 lemon juice and zest, 2 tbsp of soya sauce, salt and pepper, chili pepper)

vegetables ( any you like or have in the fridge - I used leek, 2 zucchinis, 2 mushrooms)

2 tbsp of balsamic vinegar

salt and pepper

thyme and rosemary

1 tbsp olive oil

What we have to do:

1. Mix marinate ingredients and brush over the chicken and leave for 30 min ( While you chat to your friend on the phone!!! )

2. Cut vegetables into bigger chunks. Sprinkle salt and pepper, thyme and rosemary, olive oil and balsamic vinegar. Mix it.

3. Put chicken on a baking try, put the veggies around it and put into the oven ( 180C) for 40 min. 

4. Serve!!!

I also served with fresh vegetable salad for extra vitamins (carrot, red cabbage, spring onions, leek, dill, olive oil and red vine vinegar!!!).
