Sauteed spinach with tomato sauce
Do you remember Popeye The Sailor? What was his favourite dish and what made him strong? Spinach is the ultimate answer!!! So spring has arrived and according to Greek tradition the first Lent Monday is called Clean Monday when everyone tries to clean up their homes and kitchens! To be able to do all the duties we really need much strenght and here we go - iron will give plenty of it!!! Enjoy Popeye delight and be strong and healthy!!!
What we need:
300gr of spinach, washed and chopped.
1 tin of peeled Italian tomatoes
3 cloves of garlic
1 medium onion
salt and pepper
Italian herb mix ( rosemary, basil and thyme)
2 tbsp of olive oil
What we have to do:
1. Chop onion and garlic and fry in a pan.
2. Smash tomatoes in a tin and pour over onion and garlic. Add herbs and salt and pepper.
3. Put spinach into a hot skillet with a drizzle of olive oil and mix it and put a lid on. Leave it for 2 min.
4. Season the spinach with salt and pepper and put into a serving dish. Pour over tomato sauce.
