Tex-Mex Spinach Omelet



Breakfast is good!!! These words are being told us since childhood! But if it's with spinach, I'd say it's even better!!! :)

Recently I've been kind of into spinach and every now and again I keep looking for new recipes or ways of using it. So this breakfast I had a great omelet with a touch of Tex-Mex. Well I've always wanted to visit Texas, USA, or Mexico... But it's still in my wish list ( I guess Aladin has forgotten me... ), so when I saw the recipe in Better Homes and Gardens website, I knew I'm gonna try it! With some changes... :)

What we need:

2 eggs

2 tbsp of milk

1 teaspoon of chopped cilantro or parsley

salt

ground cumin

50gr of cheddar cheese

a handful of baby spinach

2 tbsp of sweet corn

a pinch of red pepper flakes ( I think fresh chili would be even better but I had none!)

a drop of olive oil or melted butter

What we have to do:

1. Whisk eggs and milk. Add salt, cumin, cilantro.

2. Preheat a pan with oil. Pour the egg mix and cover with a lid. 1 min later try to turn omelet upside down, then add cheese and baby spinach. Fold omelet in half. Sprinkle sweet corn and red pepper flakes. Leave for 1-2 min.

3. Turn the heat off and serve!!!
