Zucchini, carrot, leek and mushroom stew



During the Lent period I want something lighter that's why today I had vegetable stew for dinner. 

What we need:

1 big leek

2 big carrots

2 small zucchinis

1 medium potato

1 red pepper

1 small chili pepper

4-5 mushrooms

1 tbsp of red pepper paste

1 l vegetable stock

2 tbsp olive oil

salt and pepper

thyme

rosemary

lemon juice to freshen up 

What we have to do:

1. Chop vegetables and mushrooms. Preheat a pot with a drizzle of olive oil, add vegetables. Cook for 5 min and add vegetable stock. Stir, add salt, pepper, thyme and rosemary.

2. Cook for 10 min and then add red pepper paste and chilli.

3. Serve with a drizzle of lemon juice ( optional).
