Artichoke stuffed with chicken


Sincerely, I am not an artichoke fan but whenever I find a nice recipe, I give it a try. This time the recipe is taken from a Turkish cookery magazine 'Lezzet', March edition.

What we need:

1 artichoke 'heart'
1 chicken breast
2 garlic cloves
2 tbps of lemon juice
salt and pepper to taste
a bunch of spinach
1 carrot
1 onion
thyme
oil
cheese
2 tbps of besamel sauce

What we have to do:

1. Put artichoke heart into salted water and cook until soft. Add lemon juice.
2. Cut chicken breast in cubes, add salt and pepper with thyme and fry witha bit of olive oil. Add carrots and onion, when they are almost done add spinachi mix and turn the heat off.
3. Put artichoke on a baking tray, add chicken and vegetable mix, add some besamel sauce and a bit of cheese. Put into oven for 20 min. (170C). You can serve with fried vegetables or fresh salad. Before serving dirzzle some more lemon juice and some greens to garnish! Enjoy!!!
