Eggplant and potato gratin in tomato sauce



What we need:

2 medium eggplants, sliced
2 big potatoes, peeled and sliced
1 onion, chopped
1 can of peeled tomato
200ml vegetable stock
salt and pepper to taste
basil
oregano
parsley

What we have to do:

1. Slice eggplant and peeled potato. Sprinkle with some salt and pepper.
2. Chop the onion and fry with some salt. Add a can of tomatoes. With a fork crush the tomatoes, add basil and oregano.
3. Take casserole dish, add a table spoon of oil, place a layer of potatoes, then eggplant, add half of the tomato sauce. Then again add a layer of potatoes and a layer of eggplant. Pour the rest of the sauce.
4. Preheat the oven 170C and put the casserole for about 20 min. Then add some cheese ( optional) and continue for 10 more min. Garnish with some herbs and serve!!!
