Salmon burger for lunch

Today I still had some salmon 'muffins' left so I decided to follow completely Rachel Ray recipe and make a burger with rolls, tomato and onion relish, dill mustard. So I just warmed up the salmon muffin/burgers in the microwave, toasted rolls, addet tomatoes and mustard. Easy-peasy!!!

Here's the original recipe:

What we need:
500gr of skinless salmon filet, cut into chunks
1 tbps of capers
grated peel of half of lemon
2 tbps of chopped parsley
2 teaspoons of seafood seasoning
salt and pepper
1 tbps of olive oil ( EVOO, as Rachjel Ray calls it!)
2 tomatoes
1 red onion
2 tbps of Dijon mustard
2 tbps of fresh dill, fşnely chopped
4 kaiser rolls, split
lettuce leaves

What we have to do:

1Using a food processor, coarsely chop the salmon; transfer to a bowl. Mix in the capers, lemon peel, parsley and seafood seasoning and season with salt and pepper. Form into 4 patties.
2. Preheat the broiler. In a nonstick skillet, heat the EVOO, 1 turn of the pan, over medium-high heat. Add the patties and cook for4 minutes on each side.
3. Meanwhile, in a small bowl, chop tomatoes and red onion. In another small bowl, mix the mustard with the dill.
4. Toast the rolls under the broiler and slather each side with the mustard-dill sauce. Squeeze the lemon half over the cooked burgers. Set a lettuce leaf and burger on each roll bottom and top with tomato relish and a roll top.
