Zucchini and Izmir tulum cheese salad



Today I was reading about different cheeses in Wikipedia and was very surprised not to find anything about Turkish cheese in English as Turkish have a great variety cheeses. That's why today I decided to make something that would include Turkish cheese. My choice this time was Izmir tulum cheese ( cheese made in a goatskin bag).

What we need:
2 zucchini
100gr wallnut
1 orange zest and juice
olive oil
salt and pepper
1 teaspoon of ketchup
2 garlic cloves
50gr of Izmir tulum cheese or any of your favourite ( I used Izmir tulum cheese and simple yellow cheese)
some dill

What we have to do:
1. Wash zucchinis. Peel if the skin is hard. Cut into slices.
2. Preheat a skillet and add some olive oil. Place zucchini slices and put a lid on. Let it soften for 2 min. Then add chopped garlic and ketchup. Salt and pepper.
3. Slice or crumble cheese.
4. On a plate place one layer of zucchini slices, then add cheese, then wallnut and some orange zest. Repeat 2 or 3 layers. Then garnish with more orange zest and fresh dill.
5. Mix olive oil with orange juice and sprinkle over the salad. Enjoy!!!
