New Potato Salad
As we were kind of in a grilling mood, I made a simple side dish that went really well with all the delicious stuff we grilled!
What we need:
about 10 boiled baby new potatoes
about 10 pickled mushrooms
1 glass of boiled or frozen peas
3 celery stalks
1 small onion
2 tbsp of dijon mustard
2 tbsp of mayonaise
2 tbsp of lemon juice
1 tbsp of chopped parsley
salt and pepper to taste
What we have to do:
1. Boil the potatoes and let it cool.
2. Cut potatoes in chunks, place them in a bowl.
3. Add pickled mushrooms, chopped onion, celery stalks, parsley, boiled fresh peas.
4. In a seperate bowl mix mustard, mayonaise and lemon juice, add salt and pepper. Mix it well and pour over the salad. Mix the salad and serve.
