Healthy lunch or dinner - Grilled chicken breast with spinach and herbs


It seems that today most of the world has decided to turn another page and start a healthier lifestyle. I'm not an exeption but with my history, I always fail to follow my resolutions. The problem with me is not the healthy aspect but the lack of exercise and the size of portions. Now as I have kitchen scales and another scales in the bathroom, and all the inspiration from Wholeliving website, I'll try once again. Why not? If not losing weight, but being more active would be an achievement. Anyway, it's all about husling your inner demons, when you are done with that, you can achieve much! So the first four days is a kind of detoxication time which focuses on smoothies and soups or other healthy liquids with a light lunch with chicken breast and fish. This is my interpretation of healthy lunch with the ingredients to enjoy during detox period!

What we need:

1 chicken breast
black pepper
a tiny pinch of salt
some spinach leaves
some of your favourite herbs ( I used parsley and dill)
wallnuts
2 tbsp of lemon juice

What we have to do:

1. Season chicken breast with salt and pepper. Put on a pre-heated grill and grill for 3 minutes on each side.
2. On a plate put some spinach and herbs, put slices chicken breast, add some wallnuts and drizzle with some lemon juice. Enjoy!!
