Chicken Rogan Josh / Indiskasis vistienos rogan josh karis


Last weekend I gave a go to another Jamie's 30minute meals Vegetable Rogan Josh with fluffy basmati rice and carrot salad. As in Istanbul it's not that easy to get a ready made patak's rogan josh paste, I had to make my own. This time I used the recipe from jamie's Ministry of food. It's surprisingly easy and it makes enough paste for two dinners. So let's start with the paste:

What we need for the rogan josh paste:
2 cloves of garlic
thumb size ginger
75gr roasted pepper from a jar
1 tbsp paprika powder
1 tsp smoked paprika powder
2 tbsp garam masala
2 turmeric
salt
2 tbsp oil
2 tbsp tomato paste
1 fresh red chilli
a bunch of corriander ( I used parsley as we dont't like fresh corriander too much)

spices for toasting:2 tsp cumin seeds, 2 tsp corriander seeds, 1 tsp black peppercorns.

What we have to do:

1. Put all paste ingredients into a blender and blend it.
2. Toast your spices in a dry hot pan and then crush them and then add to the paste.
3. Now it's time to make the curry.

As I made this curry twice, I tried both vegetarian and chicken version and of course both were very tasty. The good thing about vegetarian Indian curries is that all the spices make it really filling that you don't even feel that any meat is missing. I used chicken the second time, but you can try beef or lamb, just you'll have to increase the cooking time.

What we need:

2 onions
4-5 chicken drumsticks ( bone in)
4 cloves of garlic
400gr pumpkin
400gr cauliflower
1 glass cooked chickpeas
parsley or corriander
2 handfulls of fresh spinach
2 tbsp rogan josh paste
2 l water or vegetable stock ( depends on how thick you want your curry to be)
olive oil
salt
1 tsp chilli pepper flakes
3 tbsp natural yogurt plus extra for serving
1 lemon juice

What we have to do:

1. Peel and chop your onion and garlic. Preheat your skillet with some oil and put the onion and garlic. Let it soften a bit.
2. Put your chicken and fry on both sides for 4-5 minutes.
3. Prepare you pumpkin by peeling and chopping into cubes, wash and chop your cauliflower. Put them into the skillet with the chicken together with rogan josh paste. Mix it well together. When vegetables are coated in the paste, add your water. Let it simmer for 6-8 minutes until vegetables are soft.
4. Now it's time to add your cooked chickpeas ( you can use canned), season with salt and pepper, add your chopped parsley and chilli flakes.Simmer for 2-3 more minutes and then add the spinach. When it cooks in, add the lemon juice. Stir it and remove from the heat.
5. Finally put some yogurt and mix it in and you are ready to serve. Serve with boiled or steamed basmati rice, yogurt and some flat bread. Enjoy!

Jau sestadieni facebooke prasitariau, kad gaminsiu kari ir tikrai gaminau, visiskai vegetariska. Taip gavosi, kad buvo labai jau skanus ir viska as ir mano sveciai suvalgeme, kad net foto nepadariau. Ir kadangi dar liko rogan josh pastos, pirmadieni dar karta isviriau su vistiena. Ingridientai visi tie patys, tik pakepinus svogunus, sudejau ir apkepinau viestienos gabalelius, o toliau viskas tas pats. Si karta receptas tikrai paprastas ir nereikalaujantis super mandriu prieskoniu, ir paprastas kalafijoras su moliugu atsiskleidzia visame grazume. Labai skanu!

Pirmiausia pasigaminame rogan josh pasta ( receptas is Jamie's Ministry of Food).


Rogan josh pastai reikia:

2 skilteliu cesnako,
nykscio dydzio imbiero,
75gr keptu papriku ( parduotuvese parduoda marinuotus),
1 v.s. paprikos milteliu,
1.a.s. dumo kvapo paprikos,
2 v.s. garam masala,
2 a.s. turmeriko ( ciberzoles),
druskos,
2 v.s. aliejaus,
2 v.s. pomidoru pastos
, 1 sviezios raudonos chili,
kalendros ( naudojau petrazoles).
Dar reikia pasikepinti 2 a.s. kumino seklo, 2 a.s. kalendros seklu ir 1 a.s. juoduju pipiru.

Taigi viska sudedame i smulkintuva, tada pakepine prieskonius sudedame taip pat i smulkintuva, bei susmulkiname iki pastos. Gaunasi 4-5 dideli saukstai pastos. Man uzteko 2 kartams pamaitinti 4-5 zmones.

Taigi pasigaminus pastos is anksto, tikrai imanoma tokia vakariene pasigaminti per 30 min ( tvarkymas ir indu plovimas neiskaiciuota!) Su siuo Rogan Josh kariu ( Jamie Oliver receptas), taip pat pateikiau virtus basmati ryzius ir morku salotas.

Kariui reikia:

2 svogunu
4 skilteliu cesnako,
4-5 vistienos slauneliu be odos ( jei norite ir be kaulo, taip pat galite mesos nedeti, jei norite vegetarisko patiekalo)
400gr moliugo
400gr kalafijoro
1 stiklines avinzirniu ( galite deti ir raudonuosius ar geltonuosius lesius)
petrazoliu
geru dvieju sauju spinatu ( galite deti ir saldytus)
2 v.s. rogan josh pastos
virinto vandens apie 2l ( cia jau kaip norite- ar skystesnes ar tirstesnes konsistencijos)
aliejaus
druskos
1 a.s. chili pipiro ( na man truko astrumo)
3 saukstu naturalaus jogurto
1 citrinos sulciu
virtu basmati ryziu

Gaminame:

1. Pirmiausia nulupame svogunus, cesnakus ir susmulkiname. Keptuveje ar troskintuve ikaitiname alieju ir sudedame svogunus, cesnakus. Pakepame 2 minutes.
2. Apkepinus svogunus, sudedame vistienos gabalelius. Apkepame is abieju pusiu apie 4-5 minutes.
3. Sudedame rogan josh pasta ir smulkinta moliuga, bei kalafijora. Uzpilame vandeniu ir uzdengiame puoda, kad pasitroskintu apie 10 min.
4. Tada sudedame virtus avinzirnius ir smulkintas petrazoles, pagardiname druska ir pipirais, sudedame spinatus. Pamaisome, kol spinatai suvirs ir darzoves bei mesa bus minksta.
5. Nuimame nuo ugnies, supilame 1 citrinos sultis ir jogurta. Ismaisome.
6. Pateikiame su virtais basmati ryziais bei ploksciaja duona ( jei norite), siek tiek jogurto. Skanaus!

Origami tuna

A few months ago I watched one old Martha Stewart show where she and her guest were making origami sea bass. Actually they spent more time trying to figure out how to make those origami bags when finally asked the chef to make them. I just loved the idea of steaming fish with some vegetables in baking paper bags, and it's such a nice and healthy way to serve individual servings.For my dish, I used tuna slices with crunchy carrot, zucchini, chilli, spring onion and marinated in Asian style marinate. To make origami bags, follow really clear instructions on Martha Stewart site.

What we need:

for 2 people

300gr fresh tuna
1 carrot
1 small zucchini
2 bunches of sping onion
1 fresh red chilli


for marinate:

1 tsp grated ginger
2 cloves of garlic, grated
2 tbsp of soy sauce
2 tbsp of sesame seed oil
1 lemon juice
salt and black pepper

What we have to do:

1. Mix the marinate ingredients and put your tuna pieces for 15 min to marinate.
2. Clean and peel your carrot, then slice it into stripes or grate it. Slice the zucchini, spring onions and chilli.
3. Preheat the oven 170C.
4. Put a layer of vegetables into your pre-made origami bags, season with salt and pepper, then put your fish on top and sprinkle with some more spring onions. Put one more bag on top so that it would make a closed box and the fish could steam.
5. Put your origami fish box into the oven and steam for 20 minutes.
6. Take out of the oven, remove the top bag and serve the fish with some steamed rice or salad and a slice of lemon. Enjoy!

Receptas Lietuviskai - Origami tuna

As tikrai dziaugiuosi, kad siuo metu vis dar tesiasi tuno sezonas ir Stambule tikrai nesunku gauti sviezio tuno. Taigi ir si karta nuejus parduotuve, zuvies pardavejas tiesiog atpjove grazu gabaliuka nuo didziules zuvies. Grizus namo, jau zinojau, ka gaminsiu, nes pries kelis menesius ziurejau Martha Stewart kartojama laida, kai ji su kazkokia Amerikos rapo zvaigzde gamino zuvi origami dezutese. Zinoma pati Martha buvo labiau susidomejusi, kaip islankstyti sias dezutes. O tikrai nesunku ir po pirmo bandymo, as sulanksciau dar 5 dezutes. Jei susiruosite gaminti zuvi tose origami dezutese, tai vienai porcijai pasiruoskite 2 dezutes ( instrukcijos cia), nes i viena dedame darzoves ir zuvi, o kita dezute naudojame kaip dangti, kuris padeda zuviai ir darzovem pasigaminti garuose. Tikrai idomus, skanus ir sveikas budas pasigaminti betkokia zuvi. Isbandykite mano ar savo recepta!

Reikia ( 2 porcijom):

300gr tuno
1 morkos
1 mazos cukinijos
2 sluoteliu svoguno laisku
1 chilli pipiro

marinatui:

1 a.s. tarkuoto imbiero
2 skilteliu cesnako, tarkuoto
2 v.s. sojos padazo
2 v.s. sezamu seklu aliejaus
1 citrinos sulciu
druskos ir juoduju pipiru

Gaminam:

1. Pasiruosiame marinata, paprasciausiai sumaisydami visus ingridientus. Tada i ji sudedame zuvies gabalelius ir pamarinuojame 15 minuciu.
2. Pasiruosiame darzoves. Nulupame morkas ir sutarkuojame ar supjaustome juostelem, taip pat supjaustome cukinijas, chili, svogunu laiskus.
3. Ikaitiname orkaite 170C.
4. I dezutes po lygiai dedame darzoves ir and virsaus dedame zuvies file, apiberiame svogunu laiskais. Uzdengiame dezutes.
5. Dedame i orkaite 20 min.
6. Pries valgant atidengiame dezutes ir galite pateikti su apatine dezute, kartu su ryziais ar megstamom salotom ir citrinos skiltele. Skanaus!

Pear and raisin muffins with olive oil/ Kriausiu ir razinu keksiukai su alyvuogiu aliejumi




This is the time for pears and cinnamon and everyone seems to be mixing and baking. So why not to try this easy recipe and you can feed the whole crowd with them as I made 24 pretty big muffins, if you make them smaller, you might get even more. Another thing, if you like your muffins a bit sweeter, add a bit more sugar or honey. Anyway, baking is all about enjoying...

What we need:

1/2 glass of olive oil (1glass - 250ml)
1 glass of sugar
2 eggs
1 glass of milk
1 tsp vanilla
1 tsp cinnamon
1 ginger powder
2 apple marmalade
2 1/2 glasses flour
1 tsp baking powder
1/2 baking soda
2 big pears
4 tbsp raisins ( optional)

What we have to do:

1. Pour the olive oil and sugar, vanilla, cinnamon and ginger powder into a bowl and whisk it well and then add your eggs, apple marmalade, milk and mix it well again for 4-5 minutes.
2. Now add your flour, baking powder and soda and mix them in the egg mixture.
3. Peel your pears, remove the seeds and cut into pieces.
4. Preheat the oven 180C. Put paper cases into muffin tray and add a tablespoon of batter into each case. Then put in 3-4 pieces of pear and sprinkle with 4-5 raisins.
5. Bake in the oven for 25 minutes. Then let it cool and finally sprinkle with some powdered sugar if you want. Enjoy!

Receptas Lietuviskai - Kriausiu ir razinu keksiukai su alyvuogiu aliejumi


Receptas tikrai paprastas, nes cia is tu receptu, kur viska sudedam i dubeni, isplakam ir kepam!

Reikia:

1/2 stiklines alyvuogiu aliejaus ( 1 stikline - 250ml)
1 stiklinės baltojo cukraus
2 kiaušinių
1 stiklinės pieno
1 a.š. vanilinio cukraus
1 a.š. malto cinamono
1.a.s. imbiero milteliu
2.v.s. trintos obuoliu uogienes ( nebutina, bet ji sako suteikia dregmes)
2 1/2 stiklinės miltų
1 a.š. kepimo miltelių
1/2 a.s. sodos
2 dideliu kriausiu
4 v.s. razinu ( jei norite)

Gaminam:

1. Pirmiausia alieju isplakame su cukrumi, vanile ir cinamonu ir imbiero milteliais. Tada po viena sudedame kiausinius, sudedame obuoliu uogiene, supilame piena ir isplakame.
2. Tada jau issijojame miltus ir sudedame po truputi kartu su soda ir kepimo milteliais. Ismaisome.
3. Kriauses nulupame ir isimame seklas. Supjaustome siaudeliais.
4. I keksiuku forma dedame popierinius indelius, tada dedame po sauksta teslos, i kiekviena keksiuka ismeigiame po 3-4 gabalelius kriausiu, apiberiame 4-5 razinom.
5. Kepame 180 C orkaiteje apie 25 minutes. Atvesiname ir jei norite apibarstote cukraus pudra. Skanaus!

Pumpkin and apple soup

This is a must- try soup and really warming so it's really great for cool autumn evenings.

What we need:

400ml roasted pumpkin puree ( I made that some days ago and kept in a freezer)
2 medium size apples
1 onion
1 cinnamon stick
salt and black pepper
1 tsp red chilli flakes
1 tsp fresh or dried thyme
2 l water or vegetable stock
3 tbsp of olive oil
a handful of chopped parsley
some yogurt or cream and troutons for serving

What we have to do:

1. Peel and chop the onions and apples.
2. Pour some olive oil into a pot and put your onions. Fry them for 2-3 minutes and then add your apples. Reduce the heat and saute for 5 minutes until apples become soft.
3. Add your roasted pumpkin puree, season with salt and pepper, thyme, chilli flakes and pour in vegetable stock. Add 1 cinnamon stick. Bring it to boil and boil for 5 minutes to combine the flavours.
4. Remove from the heat, take out the cinnamon stick and puree the soup with a hand-held blender. Correct the seasoning and adjust the thickness to your preferance.
5. Serve with a tablespoon of yogurt, a sprinkle of chopped parsley and croutons. Enjoy!

Receptas Lietuviskai - Moliugu ir obuoliu sriuba

Sia sriuba tikrai verta isbandyti, nes ji yra labai jau rudeniska, lengva pasigaminti ir labia jau sildanti.

Reikia:

400ml orkaiteje keptų moliūgų tyrės (aš pasidariau prieš keletą dienų ir saugojau šaldiklyje)
2 vidutinio dydžio obuoliai
1 svogūnas
1 cinamono lazdelė
druskos ir juodųjų pipirų
1 šaukštelis raudonos paprikos gabaleliu
1 šaukštelis šviežių arba džiovintų čiobrelių
2 l vandens arba daržovių sultinio
3 šaukštai alyvų aliejaus
smulkintų petražolių, jogurto ar grietineles bei skrudintos duonos gabaleliu

Gaminam:

1. Nulupame ir susmulkiname svoguna ir obuolius.
2. I puoda pilame siek tiek aliejaus ir sudedame svogunus. Pakepiname apie 3 minutes ir tada sudedame obuolius. Patroskiname apie 5 minutes, kol obuoliai suminkstes.
3. Sudedame moliugu tyre ir pagardiname su druska ir pipirais, ciobreliu, chili pipiru ir supilame darzoviu sultini. Idedame nedidele cinamono lazdele. Paverdame apie 5 minutes.
4. Nuimame nuo ugnies, isimame cinamono lazdele ir susmulkiname su rankiniu smulkintuvu. Jei reikia dar idedame druskos ir vandens, jei perdaug tirsta.
5. Pateikiame su sauksteliu jogurto, siek tiek svieziu petrazoliu ir skrudintos duonos gabeleliais. Skanaus!

A perfect bowl of carrot salad

I took the idea of this carrot salad from one of the Jamie Oliver's 30 minute meals. This time it was from 'curry rogan josh, fluffy rice, carrot salad, poppadoms, flatbread, beer'. Just the curry, rice and flatbread I'll leave for tomorrow, and most probably there's no chance to get poppadoms in Turkey and the beer I'll leave for my hubby. But the salad was great especially at this time of the year when fresh tomatoes and cucumbers became so expensive. I didn't use my food processor to grate my carrots but instead used a lovely peeler with some spikes to julliene them. It added more crunch but definitely it took some time.

What we need:

3 carrots, washed and peeled
2 cm piece of ginger, washed and peeled
a bunch of parsley
1 fresh red chilli
3 tbsp of almond flakes
1 lemon juice
1/2 orange juice ( it just goes so well with carrots)
3 tbsp of olive oil
salt and black pepper

What we have to do:

1. Grate or slice your carrots into a bowl.
2. Chop chilli pepper and finely grate the ginger. Put into the carrot bowl.
3. Chop the parsley and add into the salad bowl.
4. Squeeze your lemon and orange juice, season with salt and pepper, pour in your olive oil and mix into the salad.
5. If you want, toast your almonds on a hot pan and sprinkle on the salad. Now it's time to enjoy it!

Receptas Lietuviskai - Nuostabus dubenelis morku salotu


Dar karta pasiskolinau siu morku salotu ideja is Jamie Oliver naujos laidos 'jamie's 30 minute meals', tik zinoma teko pakeisti kelis ingridientus, kad tiktu mano seimos skoniui ( na mes nelabai megstame sviezias kalendras, nors kalendru seklos patinka), bei naudojau tai, ka galima rasti vietinese parduotuvese. Visa meniu planuoju gaminti rytoj, nes megstam Indiskus patiekalus, tik rogan joch pasta gaminsiu pati pagal Jamie recepta is 'Maisto Ministerija', tik jau tai uztruks siek tiek daugiau nei 30 minuciu, bet juk rytoj sestadienis, todel galiu gaminti letai ir megaudamasi. Sios salotos tikrai puikios, vien todel, kad puikiai tinka dabartiniam metu laikui ( sakot pasnigo Lietuvoje?), beto juk pomidoru ir agurku kainos kazkodel visai nepatrauklios. Na Stambule pomidoru kilogramas apie 6lyras kainuoja, o tai virs 10 litu! Na tikrai neverti jie tokios kainos, kai aplink kalnai svieziu morku, kopustu, kalafijoru, ir kitu gerybiu. Taigi prie recepto:

Reikia:

3 nuplautu ir nuluptu morku
2cm gabaliuko imbiero, nuplauto ir nulupto
saujele svieziu petrazoliu arba kalendru
1 sviezio raudono chili pipiro
3 v.s. migdolu ploksteliu
1 citrinos sulciu
1/2 apelsino sulciu ( tiesiog jis pasakiskai dera su morkom)
3 v.s. alyvuogiu aliejaus
druskos ir juoduju pipiru

Gaminam:

1. Morkas sutarkuojame tarka ar virtuviniu kombainu, nors as naudojau specialia pjaustykle, kad gautusi siaudeliai, nes tada morkos buna traskesnes.
2. Chili susmulkinti, nulupta imbiera sutarkuoti smulkia tarka ir viska sudeti i dubeneli su morkomis.
3. Susmulkinti petrazoles ir taip pat sudeti i salotas.
4. Ispausti citrinos ir apelsino sultis, pagardinti druska ir pipirais, apslakstyti aliejumi ir gerai ismaisyti salotas.
5. Sausoje keptuveje, jei netingite, paskrudinkyte migdolus ir suberkite ant salotu. Na o dabar skanaujame! :)

Pear slab pie / Kriausiu pyragiukas



A slab pie is one of the best way to enjoy dessert with minimum effort. It's really easy to make it and if you use your favourite fruit or cottage cheese filling, it will be a hit of the evening. This time I made it with pears and sprinkled some almonds on the top to add some crunch and it looks definitely better. Lovely!

What we need:

2 sheets of puff pastry
2 pears
4 tbsp sugar
2 tbsp lemon juice
a pinch of cinammon
1 tsp vanilla sugar
1 egg
2 tbsp of almond flakes

What we have to do:

1. Peel and slice your pears and put them into a bowl. Sprinkle with sugar, cinammon and lemon juice.
2. Put one sheet of puff pastry on the fbaking paper and transfer it on a baking tray, then put the pears on the pastry sheet. Put another sheet on the top.
3. Press the sides with a fork.
4. Beat the egg and brush the top of the pie. Sprinkle with some more sugar and almon flakes. Make some holes with a knife on the top.
5. Pre-heat the oven 170C and bake the pie until the top is golden brown for about 30-35 min.
6. Serve warm or cold. Enjoy!

Receptas Lietuviškai - Kriaušių pyragiukas


Pavadinčiau tokius pyragiukus tinginių išsigelbėjimu. Taip pat tinka, kai reikia sunaudoti užsibūvusius vaisius, taip pat puikiai tiks su sald-iu varškės įdaru. Aš dar apibėriau migdolų plokštelėm, kad gražiau atrodytų ir šiaip prideda šiokio tokio traškesio. Skanumėlis tiek šiltas tiek šaltas su ledais ar be...

Reikia:

2 sluoksniuotos tešlos lakštai
2 kriaušės
4 v.š. cukraus
cinamono
2 v.š. citrinos sulčių
1 a.š. vanilinio cukraus
2 v.š. migdolų plokštelių
1 kiaušinio

Gaminam:

1. Nulupame kriaušes ir supjaustome skiltelėm. Apiberiame cukrumi, vanile, cinamonu ir citrinos sultimis.
2. Ištiesiame vieną tešlos lakštą ant kepimo popieriaus ir jį dedame ant kepimo skardos, ant pirmojo lakšto sudedame kriaušes, uždedame kitą lakštą ant viršaus.
3. Su šakute apspaudžiame kraštus. Apibarstome cukrumi ir migdolo plokštelėm.
4. Įpjauname kelias skilutes pyrago viršuje.
5. Įkaitiname orkaitę iki 170C ir kepame apie 30-35 min kol viršus tampa gražiai rusvas.
6. Skanaujame šiltą ar atvėsusį kartu su ledais ar be. Skanaus!

Spinach and feta pie with cucumber salad

A lot of food blogs and food writers are talking about Jamie Oliver's new book 'Jamie's 30 minute meals' that goes together with TV series with the same name. I haven't ordered the book yet as it's going to be my in my Christmas present list together with some other cookery books, but these days I'm really enjoying all the buzz that this book and TV series gets. As always there are a number of people who are enjoying completely different take on fast food, which is not just tasty, good-looking but nutritious as well. The others are criticizing exprensive and difficult to find ingredients and kitchen utensils. But that's what it's what it's all about - if you want it fast and delicious, you need special equipment and good ingredients. This time I cheated a bit and did only what I think is enough for our family of two who do not enjoy desserts too much. So I went just with this great spinach and feta pie and cucumber salad. I skipped tomato salad as I couldn't find fresh basil in the nearest shop and was too lazy to go further and I also didn't make coated ice-cream as it's pretty rainy in Istanbul and we're not into sweets too much. One more thing, I really didn't follow the time, but it was really easy to make and was absolutely delicious ( actually when I saw the recipe, I knew I'm going to make it straight away!). In the photo you can see a mini pie as I made a small one for myself and a bigger one for my hubby, but used the same amount of ingredients and it's definitely enough for 4 people. The original menu is in Jamie Olive's website together with some tips to save time while cooking.

What we need:

for the spinach pie:

50 gr of pinenuts ( I decided that it would be enough)
5 eggs
300gr feta cheese
50 gr Cheddar cheese
a good pinch of oregano
1 lemon
a knob of butter
400gr of spinach
270 gr filo pastry
a pinch of chilli pepper flakes
1 nutmeg for grating
olive oil
salt and black pepper

for the cucumber salad:

1 long cucumber or 2 shorter ones
10 black olives
2 tbsp balsamic vinegar
3 spring onions
1/2 lemon
1/2 fresh red chilli
5-6 springs of fresh mint
olive oil
salt and black pepper

What we have to do:

1. Preheat the oven to 200C.
2. Put a pan on a medium heat, when it gets hot, put the pinenuts to toast, tossing occasionally. Keep an eye on them.
3. Crack 5 eggs into a mixing bowl and crumble in 300gr of feta. Grate in 50 gr of Cheddar. Add a pinch of salt and pepper, a couple of pinches of oregano, zest of 1 lemon, and a bit of olive oil. Once the nuts are golden, add them to the egg mixture and mix well.
4. In your pan add some olive oil and butter, and put your washed spinach with some lemon zest and some grated nutmeg. Don't forget to stir occasionally.
5. Meanwhile, take the pastry out of the fridge. Lay a large sheet of greaseproof paper on the worktop and rub in a little olive oil over it. Arrange 4 filo pastry sheets in a large rectangular, rub some olive oil again , a good pinch of salt and red pepper flakes. Repeat until you have 3 layers.
6. Now your spinach should be ready to go into your egg mixture. Add the wilted spinach to the egg mixture and mix it well.
7. Carefully move greaseproof paper and filo into the empty frying pan ( I don't have oven-friendly pan, that's why I used cake tin instead). Push it down into the sides of the pan, then pour in the egg mixture and spread it out. Fold the philo sheets over the top and let them fall where they will.
8. Put the pan on a medium heat for a couple of minutes to get the bottom cooking, then put the pan into the oven on the top shell to cook for 18-20 minutes or until golden and crisp.
9. For the cucumber salad, I peeled my cucumbers, then halved and quartered them and cut into 1 cm chunks. Then it's time to put them into a mixing bowl and set aside.
10. Drain your black olives and remove their stones. Crush them with your hands. Add them into a bowl together with 2 tbsp of balsamic vinegar and mix them well so that the salt in olives could season the dressing. Then add finely chopped spring onions. Drizzle 4 tbsp olive oil and the juice of 1/2 lemon into the mixture and stir really well. Put your cut cucumbers and add mint leaves and chopped chilli. Mix it well and set aside to serve.
11. Serve your spinach pie still warm together with the salad or you can go with the whole menu - add tomato salad and coated ice-cream for dessert. Enjoy!

1 ilgas agurkas arba 2 trumpesni
10 juodu alyvuogiu
2 šaukštai balzamiko acto
3 svogūnu laisku sakeles

1 / 2 šviežios raudonos paprikos
5-6 sakeles šviežios mėtos
alyvuogių aliejaus
druskos ir juodųjų pipirų

Gaminame:

1. Įkaitinkite orkaitę iki 200C.
2. Dekite keptuve ant vidutinės ugnies, kai ji
įkaista, sudėkite kedro riesutus ir retkarčiais pamaisykite. Kepkite kol taps auksines spalvos.
3. Sudauskite 5 kiaušinius į dubenį ir sutrupinkite 300gr fetos. Sutarkuokite 50 gr čederio sūrio. Pridėkite druskos ir pipirų, raudonėlio, alyvuogių aliejaus, tarkuotos citrinos zieveles ir apkepintus kedro riesutus.
4. Dabar i keptuve ipilkite siek tiek aliejaus ir sudekite sviesta, kai ikaista, sudekite spinatus, su citrinos zievele ir itarkuokite muskato riesuta. Nepamirskite retkarciais pamaisyti, kol igaus tamsiai zalsva spalva.
5. Tuo tarpu, iš šaldytuvo isimkite filo tesla. Ant stalo istieskite kepimo popieriaus laksta ( galite pries tai ji sulamzyti, nes tada jis lengviau isides i kepimo forma) ir istepkite aliejumi, sudekite sluoksni filo teslos, aptepkite aliejumi, apiberkite druka ir cili pipirais, ta pati pakartokite, kol gausime 3 sluoknius ( as dariau visus 5 sluoksnius).
6. Dabar jūsų špinatai turėtų būti paruošti, todel sudekite juos i kiaušinių mišini ir gerai išmaišykite.
7. Atsargiai perkelkite kepimo popieriu ir filo lakstus į tuščią keptuvę (aš neturiu orkaitei atsparios keptuves, todel naudojau forma tortams). Priglauskite tesla prie sienelių ir supilkite kiaušinių masę bei paskleiskite ją. Sulenkite filo teslos lapgtis labai dailiai tai daryti, nes iskepus vistiek graziai atrodys, svarbiausia uzdengti kiausiniu mase.

Kepimo forma arba keptuve pastatykite ant vidutinės ugnies ir kepkite pora minuciu, kad pyrago apacia pradetu siek tiek skrusti, tada įdėkite visa pyraga į orkaitę ir kepkite 18-20 minutes arba iki auksinės spalvos.
9. Agurkų salotoms, jei norite nulupkite agurkus, arba paprasciausiai subraizykite sakute, tada perpjaukite perpus, ir kiekviena puse dar per pus, tada susmulkinkite i 1 cm gabaliukus.
10. Nusausinkite savo juodasias alyvuoges ir pašalinkite jų kauliukus. Rankimos sutraiskykite. Sudekite i dubeneli, uzpilkite balzaminiu actu ir viską gerai išmaišykite. Tada pridėkite smulkiai pjaustytus svogūnų laiškus. Supilkite 4 šaukštus lyvuogių aliejaus ir 1 / 2 citrinos sulčių ir ismaišykite. Įdėkite savo supjaustytus agurkus ir mėtų lapelius bei smulkinta čili. Gerai išmaišykite.

Patiekti špinatu pyraga dar šilta, kartu su salotomis arba galite pasigaminti visa meniu - su pomidorų salotomis ir padengtais ledais desertui. Mėgaukitės!

Potato and leek soup/ Bulviu ir poru sriuba

I come from a country where potato is considered as the second bread and we eat them with almost every dish and have numerous ways of preparing it. However, when making soups, potato is usually one of the ingredients and almost never the main one. Plus, Lithuanians never make pureed soups and a very traditional Lithuanian wouldn't eat it. One of my friends told me her father's words that he would eat pureed soups only if he lost all his teeth.
A good thing is that younger generation is more flexible and is eager to try new dishes and try to experiment with traditional and new ingredients. This time a very simple but delicious potato and leek soup. My in-laws said that they had no idea what it was made of but it was tasty! Homemade chicken stock adds smoothness to the soup and a touch of rosemary and chilli pepper makes it warming and very pleasant to eat.

What we need:

for chicken stock:

2 chicken wings or any part of chicken
3 cloves of garlic
1 onion
2 bay leaves
2 branches of rosemary
2l water
salt
4-5 peppercorns

for the soup:

3 potatoes
1 leek
1/2 tsp chilli pepper flakes
olive oil
salt and black pepper
parsley

What we have to do:

1. Put chicken pieces, peeled garlic and onion, together with bay leaves and rosemary, salt and peppercorns into a pot. Pour with water and bring it to boil and cook for 30 minutes. Do not cover the pot. Before using it in a soup, drain it.
2. To make the soup, peel your potatoes and chop into small pieces, slice your leek.
3. Add some olive oil into a pot and put the leeks. Saute for 3-4 minutes and add the potatoes and season with salt and pepper.
4. Pour your chicken stock ( only liquid) and cook until potatoes are soft for about 10 minutes.
5. Use a hand-held blender to puree the soup until smooth. Correct the seasoning and add chilli pepper flakes. Bring it to boil.
6. For serving, pour your soup into bowls, add some slices of leek and some parsley. Drizzle with some olive oil and serve! Enjoy!

Sultiniui reikes:
2 vistienos sparneliu ar kitos vistos dalies
3 cesnako skilteliu
1 svoguno
2 lauro lapu
2 sakeliu rozmarino
2 l vandens
druskos
4-5 juoduju pipiru grudeliu

Sriubai:

3 bulviu
1 poro
1/2a.s chili pipiro
alyvuogiu aliejaus
druskos ir juoduju pipiru
petrazoliu

Gaminame:

1. Pirmiausia isverdame sultini. I puoda sudedame vistiena, luptus cesnakus, svoguna, lauro lapus, rozmarina, druska, pipirus ir uzpilti vandeniu ir uzvirinti. Virti apie 30 minuciu neuzdengus puodo. Pries pilant i sriuba, nukosti ir naudoti tik sultini.
2. Dabar gaminame sriuba. Nuplauname darzoves, supjaustome porus, nulupame ir susmulkiname bulves.
3. I puoda ipilame siek tiek aliejaus, sudedame porus. Patroskiname apie 3-4 minutes, tada sudedame bulves ismaisome i supilame sultini, pagardiname druska ir pipirais.
4. Supilus sultini verdame kol bulves suminksteja apie 10 minuciu.
5. Bulvems isvirus, su rankiniu smulkintuvu smulkiname kol sriuba gaunasi vientisa. Iberiame chili pipiro ir uzviriname.
6. Pateikiant supilame sriuba i dubenelius, uzdedame keleta poro riekeliu ir petrazoles sakele, apslakstome alyvuogiu aliejumi. Skanaus!

Revani - Turkish delight

It's weekend again and an easy recipe for my Lithuanian girls in Turkey... for those with a sweet tooth! :D Revani is a Turkish semolina cake soaked in sugar syrup and sprinkled with some nuts. This time I used coconut but it's common to use pistacho nuts as well.

What we need:

3 eggs
1 glass of sugar ( 250ml)
80gr of butter
1/2 glass of flour
1 glass semolina
1/2 lemon zest
1 tsp baking powder
nuts

for syrup

2 glasses sugar
2 glasses water

What we have to do:

1. Cook your syrup by pouring sugar and water into a pot. Bring it to boil and simmer for 10 minutes. Then leave it to cool.
2. Pre-heat your oven 175C.
3. Mix the eggs, soft butter and sugar until fluffy.
4. Mix flour, semolina, baking powder and lemon zest.
5. Pour your dry ingredients into egg mixture and whisk until combined.
6. Butter your cake tin and put into the oven for 30 minutes until baked and top is golden brown.
7. When your cake is baked, pour your syrup over and leave it to cool. Then sprinkle with your nuts and serve.

Receptas Lietuviskai - Revani - Turkiskas gardesis


Savaitgaliui as vel siulau Lietuvos mergaitem ( na toms pacioms is Facebooko) pasigaminti lengva tradicini Turkiska pyraga su manu kruopom ir sirupu. As apiberiau kokoso drozlem, taciau taip pat galite naudoti pistacijas ar kitus riesutus.

Reikia:

3 kiausiniu
1 stiklines cukraus ( 250ml)
80gr sviesto
1/2 stiklines miltu
1 stikline manu kruopu
1/2 citrinos zieveles
1 a.s. kepimo milteliu
riesutu ( as naudojau kokoso drozles, bet taip pat naudojamos ir pistacijos)

sirupui:

2 stikliniu cukraus
2 stikliniu vandens

Gaminame:

1. Pirmiausia issiverdame sirupa. I puoda supilame cukru ir vandeni ir uzviriname, tada ant mazos ugnies verdame apie 10 minuciu. Atvesiname.
2. Ikaitiname orkaite iki 175C.
3. Kiausinius, sviesta ir cukru isplakame iki putu.
4. Sumaisome sausuosius ingridientus: miltus, kepimo miltelius, manu kruopas, citrinos zievele.
5. Imaisyti sausuosius ingridientus i kiausinio plakini.
6. Istepti torto forma sviestu ir supilti tesla. Deti i orkaite ir kepti apie 30 minuciu kol virsus bus rusvos spalvos ir vidus iskepes.
7. Iskepus pyraga uzpilti sirupu ir leisti atvesti, tada apiberti riesutais ir skanauti!

Roasted tomato and red pepper soup

It's been a week since it started raining non-stop in Istanbul and I'm really not into mood to do anything, that's why I decided to warm up by making roasted vegetable soup. By roasting peppers and tomatoes, you get slightly sweet flavour and with a touch of chilli pepper, it makes a lovely rainy autumn soup.

What we need:

6 medium tomatoes
4 red peppers
1 chilli pepper
1 onion
3 cloves of garlic
olive oil
salt and pepper
1 tsp red pepper powder
1 l water or vegetable stock
1 tsp dried basil ( you can use fresh as well)
1 tsp dried thyme

For serving:

some fresh chopper parsley or basil
1 eggplant and zucchini
some lemon juice

What we have to do:

1. Wash your vegetables, remove red pepper seeds and put your tomatoes, peppers, onion, and garic on a baking sheet, sprinkle with some salt and pepper and some olive oil. Put into a hot oven for 15-20 minutes to roast.
2. Meanwhile, cut zucchinis and eggplant into small square pieces and fry with some olive oil on a pan until soft. Season with salt, pepper and some thyme.
3. When your vegetables are soft and nicely roasted, take out of the oven and let it cool for a while. Then remove pepper and tomato skins.
4. Put your roasted vegetables into a liquidizer and puree until smooth. Then transfer into a pot.
5. Add some water into your pureed vegetables and correct the seasoning, add some thyme and basil, red pepper powder, you can even add some extra chopped garlic. Bring your soup to boil.
6. To serve, pour your soup into a bowl, add a tablespoon of fried eggplant and zucchini ( for a bite) and sprinkle with some fresh parsley or basil and a squeeze of lemon juice. Enjoy while it's hot!

Receptas Lietuviskai - Orkaiteje keptu pomidoru ir papriku sriuba


Kadangi Stambule be perstojo lyja jau visa savaite, tai kazkaip uzsimaniau kazko silto ir skanaus! Todel pats laikas gardziai sriubai, si karta darzoves apkepiau orkaiteje, kad jos igautu svelniai saldu skoni, ir truputi chili pipiro, kad susildytu. Tai stai kaip gimsta skani ir silta lietingo rudens sriuba.

Reikia:

6 pomidoru
4 raudonuju papriku
1 chilli pipiro
1 svoguno
3 skilteliu cesnako
alyvuogiu aliejaus
druskos ir pipiru
1 a.s. raudonos paprikos milteliu
1 l vandens arba darzoviu sultinio
1 a.s. dziovinto baziliko ( jei turite naudokite sviezia)
1a.s. dziovinto ciobrelio

Taip pat jei norite pateikite su:

1 nedidele cukinija
1 baklazanas
1 citrinos sultys

Gaminame:

1. Nuplauname visas darzoves. Isimame seklas is paprikos, nulupame svoguna ir cesnakus. I kepimo skarda sudedame pomidorus, paprikas, i 4 dalis perpjauta svoguna ir cesnakus. Apiberiame pipirais ir druska, apslakstome aliejumi. Dedame i karsta orkaite ir kepame 15-20 minuciu.
2. Tuo metu, susmukiname baklazana ir cukinija mazais gabaliukais ir apkepiname keptuveje su siek tiek aliejaus. Pagardiname druska, pipirais, dziovintu ciobreliu.
3. Iskeptas orkaiteje darzoves isimame is orkaites ir truputi atvesiname, tada nulupame odeles. Sudedame visas darzoves su susidariusiomis sultimis i smulkintuva ir susmulkiname. Supilame viska i puoda.
4. I puola ipilame siek tiek vandens, kad praskiestume sriuba, dar karta jei reikia pagardiname druska ir pipirais, jei norisi dar papildomai idedame cesnako, baziliko ir ciobrelio. Kai sriuba uzverda, nukeliame nuo ugnies.
5. Supilame sriuba i dubenelius, ant virsaus dedame po sauksta apkepinto baklazano ir cukinijos, apiberiame smulkintu svieziu baziliku ar petrazolem. Jei norite apslakstome citrinos sultimis. Skanaujame!

Paneer and mushroom skewers

Why do I like Indian cuisine? because with very simple ingredients and some spices you can make a real party in your mouth! This time I made paneer and mushroom skewers marinated in Indian spices and then quickly grilled and served with simple vegetable salad. You can find a recipe how to make paneer at home right here.

What we need:
5-6 boiled mushrooms ( boiled for 15 min)
100gr paneer
2 green chillies ( or sweet pepper if you like)
srping onions
1 lemon juice
1/2 tsp ground cumin
1/2 tsp garam masala
1/2 tsp ground ginger
1/2 tsp crushed coriander seeds
black pepper and salt
2 cloves of garlic
2 tbsp oil

What we have to do:

1. Mix all the spices in a bowl, add lemon juice, grate some garlic and add your oil. Mix it well.
2. Cut paneer into chunks, cut your mushrooms in halves, cut some spring onion and chilli. Put your vegetables and paneer into a bowl with spices and let it marinate for an hour.
3. Put paneer and vegetables on skewers and grill on a hot grillpan.
4. Serve with fresh vegetable salad, some yogurt and flat bread. Enjoy!

2 astrios paprikos ( arba saldzios, tiesiog priklauso nuo to, kokios jums patinka)
svogunu laisku baltoji dalis
1 citrinos sultys
po puse sausktelio malto kumino, garam masala, imbiero milteliu ( galite ir sviezia deti), kalendros seklu, juoduju pipiru,
druskos
2 skilteles cesnako
2 v.s. aliejaus

Gaminam:

1. Dubenelyje sumaisyti visus prieskonius, sudeti tarkuota arba su druska istrinta cesnaka, citrinos sultis, alieju. Gerai viska ismaisyti.
2. Supjaustyti paneer suri i kvadaratelius, ta pati padaryti su paprika, apvirtais grybais ir svogunu laiskais.
3. Darzoves su suriu sudeti i prieskoniu dubeni, ismaisyti bei leisti siek tiek pasimarinuoti ( na bent jau valanda), tada sumauti ant mediniu ar metaliniu iesmeliu ir apkepti ant griliaus ar keptuves.
4. Pateikti kartu su salotomis ir jogurtu. Galite nueme nuo iesmeliu suvinioti i tortilija ir taip valgyti. Skanaus!

Must-try sticky red cabbage with apple and balsamic vinegar/ Raudonieji kopūstai su obuoliais ir balzamiko actu

I'm not sure if it's ok to say that, but this simple cabbage dish is really bloody good you could eat the whole bowl on its own without anything else. But you can always add some roasted meat on a side.

What we need:


1 red cabbage ( medium size)
1 tsp fennel seeds
olive oil
1 onion
2 apples
salt and pepper
150ml balsamic vinegar
1 tsp of butter
a handful of fresh parsley

What we have to do:

1. Pour some oil into a pan or a saucepan, get it hot and then add fennel seeds and chopped onion. Cook until light golden.
2. Peel and cut your apples into pieces and add into the pan, followed by the chopped cabbage chunks, salt and pepper and the vinegar, and stir it together well.
3. Put on the lid and continue to cook on a low heat for an hour, checking and stiring every so often.
4. When your cabbage is gorgeously sticky- sweet, remove it into a serving plate, pop the butter on top and sprinkle over some chopped parsley.

Receptas Lietuviskai - Troškintas raudonasis kopūstas su obuoliais ir balzaminiu actu, kurį privalot paragauti


Reikia:

1 raudonojo kopūsto
1 a.s. pankolio sėklų
alyvuogių aliejaus
1 svogūno
2 obuolių
druskos ir pipirų
150ml balzaminio acto
1 a.s. sviesto
saujelės šviežių petražolių

Gaminame:

1. Į gilią keptuvę įpilkite aliejaus, kai jis įkais, sudėkite pankolių sėklas ir smulkintą svogūną. Apkepame kol svogūnai tampa šviesiai rusvi.
2. Nulupame ir supjaustome obuolius, sudedame juos į keptuvę kartu su smulkintu kopūstu, druska, pipirais ir balzaminiu actu. Pamaišome ir uždengiame.
3. Troškiname kopūstus ant mažos ugnies apie valandą, nepamirštame retkarčiais pamaišyti.
4. Kopūstai gaunasi lipnūs ir maloniai saldžiarūgščiai. Sudedame kopūstus į lėkštę ar dubenėlį, pagardiname šaukštu sviesto ir apibarstome smulkintom petražolėm. Skanaus!

Brandy and chocolate torte

A torte is a cake made primarily with eggs, sugar, and ground nuts instead of flour. Variations may include bread crumbs as well as some flour. For this cake I used some ground butter biscuits. I really loved megingue type cake and it's really great with some cream or ice-cream and a cup of fresh coffee.

What we need:

4 eggs
200gr sugar
300gr dark chocolate
6 tbsp of brandy
50 gr ground butter biscuits or digestives
butter for greasing the cake tin
cacao

What we have to do:

1. Pour some water into a pot and put a bowl on it. Add your chocolate and put on a heat. Let the chocolate slowly melt. Then mix in your brandy.
2. Preheat the oven 160C.
3. Seperate egg yoks from the whites. Whisk the egg yoks until creamy and add your ground biscuits, then pour in a bit cooled chocolate.
4. Whisk your egg whites until the shape peaks and start adding your sugar, a spoon at a time. You with have shiny meringue.
5. Incorporate the meringue into chocolate mixture carefully. Pour the mixture into a greased cake tin and put into the oven for 35-40 minutes. Then turn the heat off and şet your torte cool in the oven for 1 hour.
6. Leave the torte to cool completely before unmoulding. Then sprinkle with some cacao and serve. Enjoy!

Receptas Lietuviskai - Brendzio ir Sokolado torta


Torta ( torte)- tai pyragas gaminamas tik is kiausiniu, cukraus ir maltu riesutu. Kartais vietoj riesutu naudojami duonos trupineliai ar siek tiek miltu. Siame recepte naudojau maltus sviestinius sausainius. Trumpai tariant, si karta gavosi labai jau sokoladinis morengas su kietu pavirsiumi ir minkstuciu vidumi. Puikiai tinka valgyti su grietinele ar ledai bei puodeliu sviezios kavos.

Reikia:
4 kiausiniu
200gr cukraus
300gr juodo sokolado
50gr trapiu sausainiu
siek tiek sviesto formai istepti
6 saukstu brendzio ar likeriuko ar amareto

Gaminame:
1. Pirmiausia ant puodo su vandeniu uzdekite dubeneli su sulauzytu sokoladu ir kaitinkite kol istirps. Kol tirspta supilkite brendziuka ir maisykite kol visiskai istirps.
2. Dabar jau galite ijungti orkaite 160C.
3. Kol kaista, atskirkite balymus nuo tryniu. Trynius paplakite ir sumaisykite su smulkintais sausainiais ( blenderyje susmulkinau). Tada imaisykite truputi atvesinta tirpinta sokolada, gerai ismaisykite.
4. Isplakite baltymus iki putu,ir po truputi dekite cukru ir plakite. Gausis blizganti morengu mase. Isplakus imaisykite i sokolado mase. Po truputi dekite morengus ir letai maisykite. Ismaisius, dekite torta i orkaite ir kepkite 35-40 min, iskepus ir isjungus orkaite leiskite pyragiukui atvesti neisimant is orkaites.
5. Atvesus apiberkite kakava ir prasom, ragaujam su ledais, plakta grietinele ar kavos puodeliu. Kepant virsus gali siek tiek suskilti, bet tai gerai, virsus turi buti sausai kietas, o vidus buna minkstas morengas. Skanaus!

Making Indian Paneer at home

Paneer is fresh cheese made by curdling milk with lemon juice or yogurt. It's also very similar to traditional Lithuanian cottage cheese bu t Lithuanians make it by curdling milk with sour milk and it generally has softer texture. Anyway, both cheeses are absolutely delicious and now I'm ready to try even more Indian dishes.

What we need:

2 l whole milk
250 live yogurt

What we have to do:

1. Pour your milk in a big pot and bring it to boil.
2. When milk starts boiling, pour in your yogurt and stir for 5 minutes. The heat and acid will curdle the milk.
3. Put some cheese cloth or a clean thin kitchen towel on a bowl and drain the curd. Wash it with cold water and shape the cheese in the cloth. Put a heavy thing or a pot with water on the top and leave the cheese for 1 hour.
4. Remove cheese cloth and paneer is ready to be used in other dishes or just eaten on a slice of bread with some chilli and salt. Enjoy!

Receptas Lietuviskai - Paneer

Paneer - tai Indiskas baltasis suris, kuris labai jau panasus i Lietuviskaji. Zinoma Lietuviskasis suris daromas is rugpieno, kuris yra uzplikomas verdanciu pienu ( bent jau taip mano mama gamindavo), o paneer suris gaminamas is pieno ir trupucio jogurto. Kadangi karves neisigijau, todel suri dariau is parduotuveje pirkto pieno su uzrasu 'whole milk', t.y. nenugriebtas pienas ( nors kas ten zino) ir gyvu jogurtu ( live yogurt / doğal yogurt).

Reikia:

2 l pieno,
250ml gyvo jogurto

Gaminame:
1. I puoda supilame piena ir laukiame kol uzvirs.
2. Kai pradeda virti, sudeti jogurta ir nenustojant letai maisyti. Pamatysite, kad pienas pradeda trauktis ir atsiranda gumuliukai, bei isrugos.
3. Maisome kol susidaro aiskus varskes gumuliukai ir isrugos.
4. Ant kostuvo patiesiame svaru plona balta virtuvini ranksluostuka arba merles gera gabala, tada supilame visa susidariuse varske su isrugomis. Leidziame isrugom nuvarveti, dar karta su saltu vandeniu nuplauname varskes gumuliukus, ranksluosteli suspaudziame, kad isrugos gerai nuvarvetu. Surisame suri ir padedame ant lygaus pavirsiaus, ant surio uzdedame koki nors sunku daikta ( as dejau ta pati puoda, kuriame virinau piena su vandeniu. Palikti 1 valandai. O tada jau isimti is merles ar ranksluostuko ir gaminti gausybe indisku patiekalu arba papraciausiai valgome viena su trupuciu cili ir druska. Siaip suris gaunasi be druskos, todel pries spaudziant galite ideti druskos ar prieskoniu. Skanaus!

Moussaka


Moussaka is one more great dish from Greek cuisine. As I love eggplant and anything with it, so it was so much fun to make it and enjoy it together with my husband. Somehow, I find this dish even tastier and better looking the other day. Then it looks better ( you can cut a perfect piece) and flavours combine completely and it's really great. But yes, it's a really hearty dish and you need some light fresh salad on the side and a spoonful of natural yogurt. To make it lighter, I used grilled eggplant and lean ground beef.

What we need:

500gr ground beef
4 big eggplants
2 onions
4 cloves of garlic
2 bay leaves
salt and pepper
olive oil
1 tsp oregano
1/2 tsp cinammon
1/2 glass white wine
500ml tomato puree
a handful of fresh parsley and mint
50 gr cheese ( I used aged Turkish yellow cheese)

for the white sauce:

100gr butter
125ml flour
1 l milk
40 gr cheese
3 eggs
a good pinch of grated nutmeg


What we have to do:

1. Slice your eggplant and generously sprinkle with salt and set aside for 30 minutes. Then pat it dry and brush with some olive oil and grill for 3 minutes on each side.
2. To make meat sauce, chopp your onions and garlic. Preheat your pan with some olive oil and put the onions and garlic together with bay leaves. Fry on a medium heat for 5-6 minutes until onions are soft. Then add your meat, oregano, salt and pepper. Brown the meat for 8-10 minutes, then add wine. Cook for 3-4 minutes and then add your tomato puree and cinammon. Finally add your chopped parsley and mint.
3. Make your white sauce, by melting butter in a pot and adding flour. Whisk it carefully to avoid lumps. Then add your milk and nutmeg. When it starts thickening add your cheese and beaten eggs. Whisk all the time. When the sauce gets thicker take it off the heat and get really to assemble your moussaka.
4. Take a big casserole dish, put one layer of grilled eggplant and then put your meat sauce and sprinkle with some cheese, then repeat one more eggplant layer and one more layer of meat and cheese. Finally pour your white sauce and some more cheese to get golden brown crust on the top.
5. Put your moussaka into the oven ( 175C) and bake for 35-40 minutes until the top is golden brown. Let it sit for 20 minutes before serving. Enjoy with fresh salad and some yogurt.

P.S. You can also add a layer of boiled and sliced potatoes together with the eggplant. Enjoy!

500ml trintu marinuotu pomidoru savose sultyse ( skardinese)
50gr surio ( tradiciskai naudojamas graikiskasis Kedalotiri suris, kuris siek tiek panasus i Permesana, paprastai is avies pieno pagamintas ir tada sendinamas kelis menesius. As naudojau turkiskaji eski kaşar - sendinta lydyta suri)
puse saukstelio cinamono
svieziu
petrazoliu ir metu

Baltajam padazui:
100gr sviesto
1/2 stiklines
miltu
1l pienopuse
sausktelio malto muskato riesuto
40 gr surio
3 kiausiniu

Pradedame gaminti:

1. Pirmiausia baklazanus supjaustome griezineliais, apibarstome druska ir paliekame bent jau 30 minuciu, tada nusausiname ir aptepame aliejumi.
2. Susmulkiname svogunus ir cesnakus. Ikaitiname keptuve su aliejumi, sudedame svogunus, cesnakus ir lauro lapus. Pakepiname ant nedideles ugnies, kol svogunai taps minksti ir skaidrus. Sudedame jautienos farsa ir pakepiname apie 10 minuciu, kol graziai parus. Dabar jau supilame vyna ir patroskiname kol vynas visiskai isgaruoja, tada pilame trintus pomidorus, raudoneli, cinamona. Patroskiname kol gaunasi tirstas mesos padazas apie 5 minutes. Pabaigoje sudedame smulkintas petrazoles ir metas.
3. Dabar jau laikas ikaitinti griliu arba keptuve ir apkepti baklazanus, po 3 minutes ant abieju pusiu.
4. I puoda dedame sviesta baltajam padazui. Kai jis istirpsta, supilame miltus ir maisome, kad nesusidarytu gumuliukai. Dabar pilame piena ir maisome, kol prades virti ir tirsteti. Sudedame muskato riesuta, suri, bei isplaktus kiausinius. Maisome, kad gautusi vientisa mase.
5. Dabar laikas sudeti viska i kepimo inda. Imame dideli karsciui atsparu inda ir sudedame puse baklazanu, ant baklazanu sluoksnio pilame puse mesos padazo, ir siek tiek tarkuoto surio, tada vel sluoknis baklazanu ir vel mesos padazo sluoksnis bei
suris. Pabaigoje uzpilame baltaji padaza bei apibarstome dar siek tiek suriu.
6. Dedame i ikaitinta orkaite 175C ir kepame apie 35-40 min kol pavirsius
bus graziai apskrudes. Palaukiame kol siek tiek atves, tada pjauname ir valgome
su svieziu darzoviu salotomis ( na a la graikiskom salotom tik be surio). Skanaus!

P.S. Taip pat kartu su baklazanu sluoksniu galite deti ir pjautytu virtu bulviu. Skanaus!

A kind of pea and potato samosas


A few days ago I watched Indian Food Made Easy on BBC HD and was more than happy to see traditional Indian dishes presented in a new way without sacrifying flavour. Samosas are not that difficult to shape as one might think, but this time I went for an even easier option - used thicker version of phylo dough - Turkish yufka and stuffed them with potatoes and peas stuffing together with some lovely Indian spices. As everyone knows, Indian cuisine uses simple ingredients, but it's all about the spices which bring so much great flavour! So this time it's not just peas and potatoes...

What we need:

3 tbsp vegetable oil
½ tsp mustard seeds
60g chopped onion
1 tsp finely chopped or grated ginger
60g frozen peas
1tbsp ground coriander seeds
1 tsp ground cumin
¼ tsp red chilli pepper powder
1/2 -¾ tsp garam masala
salt
about 100ml water
600gr boiled and crushed potatoes
4 tbsp chopper coriander or parsley
phylo dough
butter to brush the dough
2 tbsp sesame seeds ( optional, you can also use poppy seeds)

What we have to do:

1. To make the filling, preheat some oil in a pan and when it's hot, add your mustard seeds for 10 seconds, then add ginger and onion. Let them fry for about 1 minute.
2. Now add the peas into a pan together with the spices and a good splash of water. Cook until peas are soft.
3. Add your crushed potatoes, stir it well and finally add your parsley or coriander. Stir and let it cool until you make your samosas.
4. To make samosas, brush your phylo dough with melted butter, cut it into stripes and add a teaspoon of filling on each stripe and fold it several times to shape triangles. All the corners should be closed.
5. Preheat the oven 180C and then brush samosas with butter again and sprinkle with some sesame seeds if you like. Let it bake for 20-30 minutes until golden brown. Serve warm! Enjoy!

Receptas Lietuviskai - Samosos su bulviu ir zirneliu idaru!

Samosos, tai mazyciai trikampio formos pyragiukai. Idaras gali buti visoks, o tesla yra pati paprasciausia - vanduo ir miltai. Nors ir skamba paprastai,taciau kaip ir visi Indijos patiekalai, cia svarbiausia prieskoniai, nes butent jie ir ispopuliarino Indijos virtuve. Kitaip tariant, tai butu paprasti pyragiukai su bulvem ir zirneliais, o pagardinus prieskoniais, jie tampa puota burnoje. Taip pat tradiciskai samosos yra verdamos aliejuje. Si karta ikvepta sia savaite matytos laidos 'Indian Food Made Easy', pasirinkau siek tiek sveikesni varianta - bulviu ir zirneliu idara iviniojau i filo tesla ( si karta storesni varianta) ir kepiau orkaiteje. Paragaujam?

Reikia:
3 v.s. aliejaus
½ a.s. garstyciu seklu
60g smulkinto svoguno
1 a.s. smulkiai pjaustyto imbiero
60g saldytu zirneliu
1 v.s. maltu kalendrosseklu
1 a.s. malto kumino
¼ a.s. raudonos cili paprikos milteliu
½-¾ a.s. garam masala
druskos
apie 100ml vandens
600gr virtu trintu bulviu
4 v.s. smulkintos kalendros arba petrazoliu
filo teslos
sviesto aptepti teslai
2 v.s. sezamo seklu ( nebutina, taciau taip pat galite naudoti
aguonas ar svogunu seklytes)

Gaminame:

1.Pirmiausia pasigaminame idara. Ikaitiname alieju ir sudedame gartyciu seklas 10 sekundziu, kai pradeda sprogineti, dedame imbiera ir svoguna. Pakepiname apie 1 minute.
2. Tada sudedame zirnelius, bei prieskonius, ipilame siek tiek vandens. Paverdame kol zirneliai
suminkstes.
3. Dabar jau sudedame virtas ir trintas bulves, pamaisome ir pabaigoje imaisome petrazoles.
4. Filo tesla supjaustyti juostelemis, aptepti sviestu. Ant kiekvienos juosteles deti sauksteli idaro ( atvesusio) ir lankstyti taip, kad gautusi trikampiukai, sudeti ant kepimo skardos, vel aptepti sviestu ir apiberti sezamo seklomis. Dirbti
reikia gana greitai, kad filo tesla neisdziutu.
5. Dedame pyragelius i ikaitinta orkaite 180C ir kepame apie 30 min kol tesla bus graziai rusva ir traski. Valgyti siltus! Skanaus!
