
Vika's been my friend since my university days and in any other way she's a great person, friend and mum. One day we shared our love for lentils and she gave me this recipe which was good oh so good, that's why I keep making this salad every now and again. In original recipe she adds red pepper and uses red wine vinegar instead of lemon.
What we need:
1 glass of boiled green lentils
1 carrot
4 tbsp sliced green olives
4 small tomatoes
1 onion
salt and pepper to taste
parsley
2 tbsp olive oil
1 lemon juice
What we have to do:
1. Grate or chop the carrot, slice the onion, olives, tomatoes. Put your vegetables into a bowl and add boiled and cooled green lentils. Mix in some parsley, season well and add olive oil and lemon juice. Mix it well together.
2. Leave the salad in a fridge for half an hour and then serve. Enjoy!
